Just in time for your holiday weekend: Chocolate! Part of a happy diet…but not always a healthy diet. What can make chocolate even healthier? When it’s good for you. I’m a big fan of short ingredient lists. This chocolate only has 3 basic ingredients: raw honey, coconut oil and raw cacao.
Raw honey is antibacterial, as is coconut oil. Not a bad kind of chocolate to have if you want something sweet without compromising your immune system (that’s what sugar does). Raw chocolate is antioxidant rich!
For a lot of crunch, and more goodness, I added a lot of almonds to this, and topped with with some salt and pepper.
Consider this your healthy Easter chocolate, or Passover friendly dessert. So much mainstream chocolate doesn’t even qualify as chocolate—it’s “candy”, mostly because the cocoa content is too low. It’s soooo worth making your own, and SO much more DELICIOUS!
¾ cup coconut oil, melted but not hot
¾ cup raw honey
1 cup raw cacao
optional: almonds ( I probably used about a half cup)
salt and pepper for topping
-melt your coconut oil. I like to put one bowl with hot water below the bowl with the coconut oil, until it’s just melted
-add coconut oil, raw honey and raw cacao into a high powered blender (a food processor would probably do it too). Blend well
-spoon mixture into chocolate moulds, or simply use a cookie sheet or baking dish lined with a piece of parchment
-sprinkle with salt and pepper if desired
-press in almonds
-set in the freezer for 1 hour
-break into pieces and store in an airtight container in the freezer.
